Pizza Crust

OK, we've been using this recipe:

1 1/2 tsp yeast
3 cups of milled flour (I use combination of red and white wheat berries, usually 2 cups of white to 1 cup of red) 1 T of honey
1 1/2 tsp of sea salt
1 cup warm water
1/4 cup olive oil

I use my awesome Bosch mixer (available through me so email me for details) to make the dough.  I have been putting all the ingredients into the mixer (all but the flour and sea salt) and then adding the flour until the dough is smooth and supple.  And then the sea salt.  I do mill my own flour in my L'Equip Nutrimill (also available through me so send me an email for more details!)  Not trying to sell anything here but I am glad I invested in these two kitchen tools and I use them often!!  So after you put in the ALL the ingredients, let it rise until double the size.  Punch it down and shape into ball.  Prepare pizza pans or stones.  I use a big round pizza pan.  I dust the counter top with corn meal and roll that bad boy pizza crust out into a round shape for the pan.  I put it on the pan and let it rise again while it is pre baking for approx. 20 mins at 280 degrees.  Until the crust is firm.  Then I set the oven temp to 425, add my toppings and bake until the cheese is bubbly and slightly golden.

add that dash of love on top of the pizza and enjoy with neighbors and family!!  ;-)
